Freezing Fish Filets

How do you prepare and freeze your filets?
Typically, we put about six filets (e.g. trout) in a quart Zip-Loc Freezer bag covering the fish with water. The problem is that when we suddenly plan to have fish for dinner, it takes two days to thaw! Well, that's too long. When you buy those bags of tilapia from the store, you can take a couple out and thaw out in no time. I think those are flash frozen some how.:eek:hwell:

Thanks for the good ideas. We 100% halfshell the reds and most black drum, too.
Disclaimer: I don't eat tilapia. That's why (one reason) I fish. I've never seen one live and have wondered what that really is they sell at the grocery store. I thought it might be a genetic mutation or virtual fish, like virtual reality, wherever that is.
