someoneposted a flounder reciepe video but i cannot find it.it was an older cajun/italian man cooking.

Have yall ever tried cleaning them where you roll the sides down like a sock and clip out the skeleton then fill it with crab shrimp and crawfish mixed with rice, sew it up with butcher string and deep fry em? Its pretty awesome.

I do it this way but I fill the boneless Flounder with crabmeat stuffing and grill.

It's hard to beat stuffed flounder...period. However, one technique I learned from a neighbor is fantastic and simple. Start with the whole, cleaned, scaled flounder. Finely score in a crisscross pattern on each side. Lightly dust in zatarans or your favorite breading mixture. Break out the cast iron skillet and add oil to 1"ish depth. Pan fry till crisp on each side. Lay on paper towels to drain. The fine crisscross pattern will result in a bunch of 1" cubes (best way I can describe it) that you pretty much just pluck off and down the hatch. One of my favorites. Easy and delicious!
