Seadrift 8-23-20

Caught a few lower slot reds and trout and a 18'' Black Drum. Didnt plan on keeping any fish but everyone keeps saying how good Black Drum is so I brought her home. Anyone have a good recipe for the drum? Also came across a Gar that had got ran over, 1st time i have seen them in Shoalwater. Tough fishing with the slack tide and low wind but still therapeutic, water was super clear.

I really like frying 14-18" drum. The meat holds together very well.

Puppy drum are great. I like them better than reds.

No they don’t have as much meat but it’s good meat. I’ll keep them up to about 30” bc they dint have a lot of meat.

It’s also good cut up in a fish stew or seafood gumbo. The meat doesn’t fall apart.

They just have a big rib cage. Yours is a bit small to do it, but If you want to eat more of the fish on the 20” plus ones you can actually cut out the rib cage and fry that part separately and then eat the meat off the ribs. They used to do that at the Baffin Bay Cafe when it was open and that gave me the idea and it’s pretty good.

I like to cook it on the griddle in butter (heat setting on high) with your favorite seasoning. And yep that size is better than a red IMO.

Ended up putting a little bread crumbs after an egg dip with some slap your mamma seasoning. Used a little bit of olive oil to saute them and topped them with a lemon butter sauce. They are in fact tasty, not fishy at all.
