Picked up a pork belly and the ingredients to make some bacon. Got it all prepped for the 10 day cure. Will update post with more pics as I dry and smoke.

I picked up a pork belly this morning also. Doing pork belly sandwiches for dinner tonight and curing the other half for bacon. Figure I will do a simple brown sugar cure for the bacon this time.

My first pic is a little blurry. Using some bourbon, Maple syrup, brown sugar, kosher salt, smoked paprika, black pepper, and black pepper corns.

Took the pork belly out of the cure and patted dry for the 4 day set.

Also seasoned up 1 choice brisket for chopped and 2 prime briskets for sliced. Will post pics during the cooking proc

Got my briskets and pork belly on this morning. Smoked them for 5 hours the wrapped the briskets in the butcher paper.
