Ginger bounty

Pulled my ginger today. Got enough for a Filipina to cook with for a year I hope. Over 2 lbs.

What kind of ginger works for cooking? I’ve got ginger in my yard, but have never used any of the root for cooking.

I think that got it! I just buy Ginger roots (rhizomes ) @ HEB. Choose roots that have lots of little bumps on the nodes. That's where the new rhizomes will grow from. Plant 'em in pots and keep 'em in the shade. They can't tolerate bright sun. The jar is a new way I'm trying to preserve them. Preserved in your favorite alcohol. Wife has always frozen them but they deteriorate over time in the freezer. Supposed to stay fresher in alcohol and not absorb the alcohol. Besides, I like brandy. Got over half a bottle of Christian Bros left over! Make that, I Had half a bottle left over!

What dishes do you use it in?

The flowering ginger plants do not make much of a rhizome and I think they do not have much of the ginger essence either. But then I have never grown any. The food grade ginger does not make much of a flower show. If you have some, dig around under the plant. If you find a rhizome, break off a piece and smell. if it has a strong ginger smell then Voila you have ginger Read my post again Then / or google how to grow ginger and google will tell you all about it. Pretty easy plant to grow.
Ginger is used in a lot of Asian and middle eastern foods.

I have shell ginger in my yard. I did the search. It does have culinary uses, but it’s more about the leaves. It gets used in Okinawa and other to flavor food or make a tea.
