Whenever I grill my fish or shrimp for a po-boy I really don't do anything too special to them.

My fish I just put olive oil and butter in a pan powder with Tony Chachere's cook it in the pan and squeeze little lemon on it. About the same thing for my shrimp, on or off the grill.

Of course you can fry your fish or shrimp however or how hot you want.

I would think if you wanted something a little hotter you can put some paprika on it or red pepper.

Now when it comes to my po-boy, I like to use a Remoulade sauce.

I think I bought mine at HEB, but I've also made some homemade as well. I like lettuce tomato, onions, with a long slice of a dill pickle on the side.

I'm sure you saw the other posts about French bread. I've used that bolio bread from Kroger. It wasn't too bad. I put it in the toaster oven with a thin slice of butter, then the sauce.
