Favorite pork chop seasoning for sous vide?
I have cooked bone in pork chops twice now seasoned with a course ground steak seasoning (similar to Montreal). They come out amazing and tender but looking for a different flavor profile. What is your favorite seasoning for pork chops?
I was going to try my rib rub, but I think it may be too harsh after a sous vide bath. What'cha got? |

Brine them first then wash off brine, then sous vide, then pat dry, then season with your seasoning of choice. I would say way less salt do to the brine. Heavier on pepper, garlic and rosemary. Then sear hard and fast on grill or cast iron skillet. Just a couple of minutes on each side depending on the chops thickness.

I always us uncle chris’ gourmet steak seasoning and Chupacabra but, that is for grilling or baking. Ain’t never did none of that sous vide..
