Brisket this weekend

We are having a get together and have been asked to do a brisket and ribs. Going to have them ready sat morning and have to drive for an hour. Wrapping it in towels and putting in ice chest should be good? I've read articles on "resting". Anyone ever traveled with a brisket?

I know a lot of people let their brisket rest for several hrs to bring the meats temp back down

Brisket should be ok, be careful with the ribs though, they may literally fall apart if you cook them tender then put them in an ice chest for hours.

When I cook, I wrap in butcher paper. When done, I stick it in a cooler, on a pan. Normally, at least two hours go by before I open it to start slicing it. When I take it out, it is still too hot to grab with my hand for an extended period. This is even without using towels.

So yes, you'll be fine. Good point above about the ribs though. Most people like them to be fall off the bone though, so probably won't have an issue.

I always pull brisket off the pit at 200 min, wrap in foil, and rest until it gets to 165. Ribs wrap and leave on pan or like mentioned above might over cook.
