Cheesy Cauliflower

We have a big excess crop of cauliflower from the garden this year and looking for ways to use it...other than raw. Friend sent me this recipe to try...and it tastes great. He said broc also works good!

Ingredients:
1 head of cauliflower,
1 tablespoon mustard
1/4 cup milk
1 cup mayo
1 1/2 cups of cheddar
bits of pepperjack
butter to line the baking dish and olive oil to drizzle over the top while baking

Steam the cauliflower 10 -15 minutes or so then place in baking dish. Mix other ingredients in a bowl and pour over the cauliflower. Drizzle some olive oil across the top and bake until cheese melts.

Next time I try it, going to add some finely chopped onion for flavor.

Dang that looks good bud.

Maybe even add some bread crumbs on top to crust it up a bit for texture. I’m gonna have to steal your recipe.

Looks great. Have you tried to substitute cauliflower for rice in fried rice yet? Pretty good option.

Is that where you use a blender to grind up the Cauliflower? I saw that online and might be good. Thanks.
