Are you referring to a Shallow Stalker? If so that is a Banjo hull not the Ultracat. If someone else is making a copy of an Ultracat hull, what company is it?

I had a 20' Ultracat back in 2006 and it had the exact same characteristics that you mentioned. Hole shot was right around 12" once I got it propped right.
As far as the hull slap, I am pretty sure all the cat hulls do that because of the design

Interesting. But Shallow Master started out with a splashed hull so it’s not surprising

only way I could make it track somewhat straight was by attaching a drift sock to the front cleat. I had a 150 etec and it ran in the upper 40’s. It was a relatively heavy hull so I had to spin to get up but would do it with ease. Reason for spinning was because it would not get up with a straight hole shot with the JP at 6. It would just blow out.

I don’t recall the size of the prop. It was a prop built in Corpus by a guy named Chris. I believe the name of his company was Coastal Props. I took my boat to him in CC and we tried several props until we found the right one.
