Or any fish you may want to use.

Most people don't flip over Blue Fish up here in NJ but this is a really tasty way to eat those great fighting fish, or ANY fish.

1. Trim the dark blood line from the fillet. This tastes really oily and is not going to do any good for this recipe.

2. In a big pot, boil some water and place the fillet into the water and let it cook for about 5 minutes.

3. Drain and put the Blue Fish into a bowl and then place in the refigerator for 15 minutes.

4. After its cooled, make the Blue Fish just like you would a can of Tuna Fish. I use the basics, mayo and onion powder.

5. Throw a few slices of bread in the toaster and enjoy!
Pickle optional.

6. Clean up the mess before your wife gets up and freaks out on you because your doing all this at 5:30 AM.

They make a redfish salad similar to this at Cajun Fishing Adventures. I think the only difference is they use crab boil in the water when they boil the fish then serve it on a poboy.
