I smoked some oysters years ago from a recipe a friend gave me and i can't remember all of the ingredients. I remember putting them in aluminum muffin tins and adding whorteshire (sp), tabasco, lemon juice and grated fresh parmesan cheese. It seems like i'm forgetting something though.

Any suggestions?

Sounds to me like you have enough seasoning to do the job. If they're not shucked you should leave them on the halfshell, set the shells on a bed of icecream salt on an aluminum pan and smokw them on the halfshell with their liquor.

Mmmmmmm good.

I do a variation on Gilhooley's (oyster bar in San Leon, TX---best smoked oysters anywhere) oysters, smoked on the halfshell with butter and parmesan cheese....cant beat em
