Peel, de-vein and butterfly however many shrimp you desire and spread them out of a tin foil lined cookie sheet. Dice a couple of serrano peppers (minus the seeds) very fine. Melt anywhere between 1/4 to a full stick of butter - depending on how many shrimp you are cooking. Lightly season your shrimp on the pan with salt, pepper, and old bay. Add some of the diced serranos to each of the butterflied shrimp. Pour the melted butter to where each shrimp gets a little, and then add some shredded Monterey Jack on top of each shrimp. Place under the broiler until the cheese is melted and the shrimp are pink. Doing them on the grill is also tasty. For a variation, add crumbled cooked bacon when applying the serranos. Another variation for those who don't want to eat the pepper, but like the taste, cut a couple serranos in half and add them to your butter as it is melting on the stove and let the flavor work its way in.
