Last night, I put a bag of fish in the frig to thaw overnight and all day today. At 11:00 AM this morning, my wife didn't think it was thawing fast enough so she put it on the counter and left. I just got home at 6:30 PM and there are the filets, nice and warm. Question: would you eat them after being thawed for 6 hours, probably at room temp for 3 or 4???

The food safety experts would most likely say no (same thing for thawed chicken), but I would wash the fillets very thoroughly in cold water and then smell them. If I could not detect an "offish" scent, I would probably eat them. (Another trick is to feed a piece to a cat. If it will eat it, and if it doesn't get sick, then I would chance it.)

If you eat that fish, you will get sick. Raw protein left above 40 dg. for over 4 hours will GAIR-OWN-TEE gastronentiritis for you and your family. Smell does not indicate bacteria development in any foods. I repeat, DO NOT eat that fish. Even if you cook it above 145 dg, some food borne illness compromised by time and temperature abuse will still be evident in the product. Trust me, I know a thing or two about food.

should be worth a good case of the trots at the very least.

Kidding aside I would not eat it. like the earlier post said once it has gotten warm to the touch probably not going to be any good. Especially fish, chicken

3 to 4 hours is the right amount of time for the bad bacteria to take hold and start multiplying. I wouldn't chance it.

Of course it may be too late if you already ate it.
