First time on my Rec-Tec and was a success. I have done ribs on my BGE about 4 times and this was my best so far. My 2.5yr old said "Mmmm DaDa" and gave me a thumbs up. I use the 3-2-1 method. Tried killer hog seasoning and BBQ sauce. Stuff is good. Amazen tube for a nice mellow smoky flavor.

 
Looks great. A lot better than my first set of Rec Tec ribs. Like you I use the 3-2-1 method. Took them off and they looked great and I could have eaten my **** shoe easier. Was my first cook so I chalked it up to learning the smoker.

After a few set backs I put my digital thermometer in and found it was cooking 30 degrees lower than the set temp.

Just did a prime rib over the past weekend using my digital and it came out great. Love the convenience still getting used to cooking on it but I'm coming around.

Yeah the thermometer helps a lot. My pit was set to 235 but my maverick thermometer said 200. I bumped it up to 265 for the 225 to 230. So many variables I guess but it's no were near as temperamental as my BGE. Got a pork shoulder going now, hope to wake up to magic pork instead of disappointment my BGE has done to me a couple of times.

Thanks Mike. I called a couple of weeks ago. Made the adjustments. I think with different variables the temp will vary. I'm ok where it is. I did a pork shoulder last night and it stayed about 10 degrees were I wanted. Maintaining temp wise it's much better than the BGE.
