A real easy way is to just smear mayonaise over the entire piece of cobia. I like to cut them into 3 or 4 inch chuncks. Then roll them in Italian bread crumbs. Toss them in a oven at 350 for around 20 minutes. If you feel adventuras you can also do the same but cut a pocket in it and add some Italian sausage.
