I bought a new to me pit, after searching for a while, and some wood to get going. Then this weekend I finally got a free day at home and loaded her up with a few racks of pork ribs. I got the ribs at SAMS for about $18 total.

Here's some pics of the results. I didn't sauce em, like some folks do. Gonna try that with at least one rack next time. :)

pics:

1. on the pit after about 2 hours or so, about to foil em...
2. on the plate, about to disappear...
3. close up of same timeframe as photo 1
4. right before foiling

Heck, looks like you got it figured out! Now you gotta get you a redi check remote thermometer and you'll be set. Thats the exact same oven thermometer I got originally. I'm sure you found out, they don't last long in the smoke. lol.

You got a little mustard in your marinade/rub?

Those look pretty dang good Aggie, not a bad start at all, better than when I started many moons ago and used green Hickory, lol! That was before Al Gore's invention of the internet...

Get ya a pork butt and throw that in there sometime, good stuff. You'll be smoking all kinds of stuff before you know it.
