I gave up on researching for the secrets to LJS' recipes! I've never been able to manage a proper crisp or crusp, along with the seasoning to match it exactly....

Then I hear I used the wrong vinegar. Or that I used the wrong corn meal/flour batter...Or that, get this -- I didn't remove the egg yolks!

I don't enjoy Long John Silvers at all other than the traditional fish or chicken planks.... Otherwise, it is the only food that makes me sick to my stomach....I am near the point to swear up and down they fry their fries and let them cool in the grease! ...Trust me on that last statement......Its akin to, "would you like a side order of fish with your bucket of grease, kind sir?" :)

I think they use some type of tempura style batter which uses a carbonated beverage to give it the light crispy texture. Similar to that used in sweet and sour pork/chicken. I could be wrong. (carbonated being beer or soda water)
