keep seeing catch clean and cook videos showing how to clean gar. Does anyone have experience eating this fish? what is the texture like and is it even edible? delishus?

Gator gar yes. Needle nose and short nose no. White flakey meat, a little more bite to than most other fish but really good. Needle nose is like chewing on a piece of rubber
Yep he turned me on to it. By far my favorite way to fish. I’ve literally caught reds off the end of the board. Wind is the biggest issue with those boards though.
I skinned them similar to the video, except I used a hammer and hunting knife, tapping the knife to remove a strip similar to his. After skinning, I simply fileted them out, ending up with two large slabs of meat.
So if you are stuck on the beach/river bottom and can’t catch a croaker, sand trout, speckled trout, redfish, gasper gou.
A bluegill, white bass, catfish, heck a gaff top, then you might be ready to catch, clean and eat a gator gar.
As long as your starving, ….just my $.02.
