I seen some "Fresh Wild Caught Red Snapper" at several popular food chains.

They were NOT looking to good, and they were not gulf red snapper, a small text at the bottom said "product of Indonesia"

I think in Indonesian "Red Snapper" translate into, or better known by locals, as "Northern Mud Guppies" or "Sewer Trout"

Whatever they were I feel for the souls that purchase them, sitting down with there glass of wine, candle light, etc to a mouth full of that mess

I've even seen Fiesta selling bay fish, and they ALL had red eyes, I guess the fish had a long night or something lol

It's all in the name, I'm leery of any fish I don't recognize

We could ship some "Fresh Caught SharpFin Whitefish" over seas, known by locals as Hardheads or TurdRustlers, and they'd eat it up lol

Let's see, which would sell

A) Grilled spades with fat uncle boudreaux's spice mix

Or

B) 8oz "chef's choice prime cut, Black Forest Pecan Smoked Blue Water Atlantic Spade Fish, marinated in white wine roasted garlic and butter sauce"

Same thing, but "B" would sell out at a high end restaurant for $90 a plate before 7pm lol

read up on escolar........it shows up around TX groceries

In June, spent a week in Fla, went to 7 of the most pathetic fish houses I have ever seen in Mexico beach, Panama City bach and Destin, all the fin fish were dried out and really old and the shrimp smelled like bait and was already spotting.

They were pushing royal red shrimp at @$14.99 a pound and it was obviously from prior year's season.
