Flatten out the breasts and roll up some hot Jimmy Dean breakfast sausage and place inside with onion and jalapeno. Wrap with bacon and season well with cajun spice then marinate in Italian dressing for a couple of days in a ziploc bag then grill. They are GREAT and the sausage gives it flavor plus keeps it from drying out. I also us this with chicken and quail.
slice some apple, orange and onion and put one slice of each in the cavity. Season the bird and cover the breast with a criss cross of bacon. Bake at 350 deg. until tender and the juices are clear. When done, remove the birds from the baking dish, deglace the pan with a little broth and then thicken the juices. Serve the duck with some wild rice and spoon the gravy over both.
