Does anyone know the quality and ride of ProKat boats compared to the other Cat boats? Also how does the 2860 Prokat ride??

I would recommend Glacier Bay or World Cat. The Prokat 2860 rides well, but not as well as some other cats because Prokat is a planing cat.

I am not sure how much of it is legit though.
