I just wanted to give you folks a "heads up" on what has happened to me over the last 10 days. My family stopped at Buc-Ee's in Luling for drinks, snacks, and toilet break on our way to New B. I got their Hill Country Spicy beef jerky and an unsweet iced tea. Within an hour I started feeling bad. Vacation ended up miserable because of exploding diarrhea and bad abdomen cramps. My illness got VERY bad and I was barely able to function and ended up in the ER 8 days later. After a ton of tests, they determined I had a severe intestinal bacerial infection. By then I was VERY dehydrated as well. Several bags of IV solution and antibiotics, I'm on my way back to normal now at day 11. I don't want to toss any bad will towards anything or anyone because I could be wrong, but my wife and I have been going over all the events and it seemed like the most logical source. That jerky is cut real thick and potentially wasn't cured all the way. I'm not mad at them, nor will I boycott them, I just will stay away from the thicker cut jerky. I just wanted to give you all some food for thought on your next jerky purchase.

Wasn't as bad as your experience but I stopped at the one in Wharton a couple months back and bought the same jerkey. Man alive it like to have tore me up. It was bad for that afternoon until the next night.

Most food borne illnesses involving bacteria take far longer than 1 hour before the symptoms manifest. Unfortunately, most folks blame their last meal when they should be blaming a meal they consumed the prior day or even days before.

Sorry to hear about your condition. No one likes explosive diarrhea. That said, the chances of it being from jerky consumed an hour before is relatively remote. Not impossible, but relatively remote.

And due to all of the chemicals and relatively no fat to go rancid someone in the production process would have to really really screw up to make jerky go bad I would think....but then again I am no scientist.

The OP didn't say he got violently ill within an hour. He said he started feeling bad. Totally within the realm of possibility of it being the jerky. Could have been something else as well.

A friend of mine owns a restaurant. People love to come back an hour later and claim food poisoning. Most of them are trying to get their money back. My friend did some research and found that feeling the effects of eating bad food won't show up for 6-8 hours. I bet it is something else you ate earlier.
