Jerrett's in Madison does a great job. They are a full time facility and process beef and pork as well. They will do your processing how you want it done. Jack Jerrett is a good, honest man as well.
Mike McMillian is 20 miles south. 936-291-6900. He is honest and does a great job, but is not full time and sometimes hard to catch.

Van, does Greg still run the place in Elkhart? I used to always take my deer to him at his C&C location in The Woodlands and really like the way he made the sausage. The new owners of The Woodlands location don't make it the same way he used to. I personally have been using Tallents in Riverside the last few years but was wanting a change this year. I'd like some tamales made this year but the only one I know that makes them is Midway in Katy. Thanks for all of the info. It'll point him in the right direction.
Yes, Greg & Lisa are still there. They are real good folks. I agree with you on the comparrison. The Woodlands location does not compare to the one in Elkhart, IMO. Tallant's is good too but C&C is just SO convenient & SO good it works out really well for us. Have you had their summer sausage? WOW! :ac550: I only got one stick last year and a local looked at me like I was crazy. My kids devoured it and I have gone the rest of the year kicking myself for not getting more. I'll be picking up mine this weekend and I'll have 5 sticks this time. If I could find another deer I'd probably have at least 5 more made up. In a 1 buck county I'm pretty much done.
Since C&C seems to have the upper hand on summer sausage, I think i will try them. They are much closer to where I hunt anyway. Good info to have in this thread. Thanks for all the good meat processing connections.
