These deer were photographed in areas outside of Clear Lake.
Swamp, I dont remember my exact settings. I can look them up tonight. But my basic approach is to shoot with the camera in Shutter-Priority mode and set the shutter speed to 1/300 sec or faster (if enough available light). I also tweak the ISO as light starts to fade. I think for these, the ISO was at ISO400. The aperture (f-value) I dont care about, and I use whatever the camera meter says is correct for proper exposure. If you are having trouble, or want some more big lens technique for your 500mm, we can talk more. It's a big challenge to shoot a big lens + wildlife + low-light + moving subjects, and while I am by no means an expert, I've learned a few things the hard way.
Here are a few more pics, and for you whitetail experts, someone please explain to me what is going on when a buck chases a doe running full bore, and then lays down on his belly right next to her? I have some speculations, but wanted to hear some educated feedback of what exactly is going on. (or he might just be tired and this behavior is not rut related at all)
Another doe approaches, and she obtains the attention of the pair.
Look out, the wimmen are starting a scrap match. Again not sure of why this is happening. Is the first doe being protective of the buck? Is she ready to be bred? That is the only thing I could come up with but not sure. Again, it could also be non-rut related, and the first doe might just be pizzed at the 2nd for other reasons. They both were firing off some bleats, which was my first time to hear a doe-bleat/grunt in the wild.
As for your 1st question (I'm no expert either but),I would say that she is very close to being ready to breed and the buck knows this. Maybe he is tired and wants to take a breather. If she is close to ready, he will stay with her until she is or gets run off from a more - dominant buck.
As to the 2nd, I don't know that does are protective of potential suitors. Was she eating on something she liked and didn't want to share?
Anyway, again, great pics... keep 'em coming.

And here I am in Webster with nothing to do. Great pics. Since I am a wildlife biologist (armchair division) I will take a wag on what is happening. Once the buck got near enough to feel protective of the doe, he remembered to hide. If she moves off a bit, he will get up and go with her if she is about ready to breed. I have had bucks bed down with does I have shot that were in heat. He may also have been tired. On the combative does, I have seen turkey hens come in and run off gobblers to get them away from my decoys, a hot doe may be just as protective of her suitor. Cat fight in a bar sound familiar? Anyway, with that information and 5 dollars at starbucks you can get a cup of coffey.
