i took my son a couple yrs back on the dolphin Dock charter out of port a he caught a 25 or 30#jack fish fish...when we got to the dock we were getting our catch and they left out the jack fish...my son asked where it was and i said they were keeping it for shark bait...my son wasnt going for it...lol..he asked the deck hand where his fish was and he told him that it wasnt a good fish to eat and that they were gonna use it for shark bait...my son told him that we shark fish too and if we didn't like the way it tasted we would use it for bait...needless to say it never made it back to the water...didnt taste too bad...

Got drunk enough years ago down at Mud Cut to skin out a hard head and fry it up, that was tough eating. Guess if you were starving to death it'd be ok.

My grandfather said a long time ago his brother-in-law caught a big 'ol jackfish and invited everyone over for the big feast. He filleted it up and grilled it for everyone. They said that was the nastiest fish.

I often wondered about little tunny / bonito being nasty since they look just like every other tuna. A few folks on the old *** message board were wondering the same thing and reported that they cooked some just like tuna and said it was horrible.

Maybe the jackfish was good you cooked, but I am going to stick with eating trout, redfish, flounder, snapper, grouper and tuna, lol.

Lived and stationed in Hawaii, and the locals ate jacks. Rubbed them with a soy sauce/melted butter combo. Grilled, and then they drizzle hot peanut oil over it. Not my gig, but they love it.

All I know and believe if ya have to put enough seasoning on something to make it taste good, I would rather eat a plank -- Everyone has certain tastes, I have had jack, cooked fresh off the beach at the Jhook -- now we didn't have much in way of spice and we did bleed the fish -- but don't think I would try it again unless some sous chef worked on it --

I was once married to a cajun if it walked crawled or hopped it was good for the pot - I adopted don't ask don't tell with some dishes --

YA kin have my bay tuna - when we fillet them out for big shark lots of times they will have some serious marine worms in fleah , as well you CAN get Scombroid poisoning from their flesh if not properly cared for.

You guys crack me up! Especially the comment about hardhead catfish. I've eaten jacks, and hardhead catfish both. Astonishingly, they both tasted like...wait for it.....FISH! haha. Hardhead catfish required no special prep. Clip the spines off with some pliers so you don't get spiked. I used some pliers with a split ring splitter to peel them. Lay em down flat, and fillet the sides off of them. Easy as pie. Roll em in a little oil, then roll in some breading or seasoning, and into a hot pan. Tastes fine. Been some years since i've eaten jack, but they weren't bad. Bleeding them is a definite improvement. I've never tried eating a skip jack/lady fish. Everytime i filleted one for bait, they were terribly bony, and mushy as heck, even when fresh. I have eaten a small tarpon. Bony as heck but the meat tasted fine. Eaten lots of rays. If you've eaten it and didn't like it, fine, but if you've never tried it, don't be a food snob. Just try it and then decide. There is waaaaaaay to much good food out there to limit yourself to just whatever other folks tell you is good. And yes, I do looooooove me some good, fried up crispy tripas. Rolled up in a corn tortilla with some pico de gallo! I'm 100% gringo, but married to a mexican gal. Love eating Mexican (food) haha!!
