Will update pics throughout. One question. For a pig 20-25 pounds dressed I plan on cooking for 2 hrs at 275 then wrapping in foil for 4-5 hrs at 225. Does that sound like a good enough timing on the size of hog?
Sounds a little long to me, never wrapped one always smoked them thru. Poke it with your finger on the hind legs and if it is soft your done. Is it split or whole.
