they are easy to make.

get some poblano peppers. either roast the skin off or put then in a plastic bag and steam them soft in the micro so you can get the skin off. make a cut and get the seeds out and stuff with what you like. I premake picadillo or stuff it with cheese. get some egg whites and fluff them up and dip the chile in it and fry it up. Once fried, put them in a pot of tomato sauce. Let them simmer for a little bit. there, you are done.
